Our Process
- Spine Adjustment: We grind from the spine down, not the edge up, to preserve the knife's profile and cutting ability.
- Cool Grinding: Using the Tormek T-8 water-cooled system ensures the delicate tip never overheats or loses its temper.
- Refinishing: The new spine curve is polished to match the original finish (Kasumi or Migaki).
